The main difference between a Biryani and a Pulao is often debated. After extensive research about the variations in the recipe and the style of cooking, the following outlines the main difference between the two.
In a Biryani, the rice and the sauce (the gravy) are cooked separately. To bring in excellent taste, they may be cooked in the same pot (vessel) but are not mixed. This implies that the chef/cook has to carefully prepare layers of each item, i.e. a layer of rice followed by a layer of the gravy. Great and authentic Biryani's may have multiple layers with separate ingredients in each layer. The layers are mixed only at the time of serving. A Biryani is often served with a delicious curd or 'Chilly Saalan'. The sauce (gravy) may contain the meat (or whatever flesh) along with the right proportion of spices. Whereas the rice is cooked with the special spices.
The Pulao, on the other hand is prepared by mixing the spiced rice (boiled or fried) along with the flesh (meat, chicken, eggs, beef). All are cooked together.
